Lemon balm is an aromatic perennial plant measuring 60 cm high, very melliferous thanks to its flowers very rich in nectar. The white flowers appear between June and August.
Its leaves give off a strong lemony scent. In the kitchen, it can be harvested as needed to incorporate it into fish dishes, salads or even dishes in sauce.
For the record, in Greek melissa means bee, from the name of the nymph who raised Zeus by feeding him honey. The plant, by its smell or its flowers, particularly attracts this insect. Although lemon balm is very easy to propagate, starting over from time to time by sowing is a very good way to regenerate its population: more vigor, more genetic diversity.
Sowing: from February to April in a nursery for transplanting in the fall. Sowing in place at the end of spring, in fresh, well-drained soil, in partial shade. Lemon balm does not like drought or excess humidity.
Cut back after harvest to produce new shoots. -
