The Aubergine 'Violette de Toulouse' is an old variety originating from the South of France, from the Midi-Pyrénées region. Early and very productive, this peasant variety produces elongated fruits 20 to 25 cm long, cylindrical in shape, with white flesh, sweet and very good flavor.

The seeds are sown in a warm place, from February to mid-April at a temperature of 22-25°C. Germination takes two weeks. Transplanting in open ground from May to June, keeping a spacing of 50 cm between plants. Harvest from August to September.

Eggplant belongs to the Solanaceae family. Sow in 4 x 4 cm clods, bury the seeds 3 mm deep. As soon as the plant measures 8 cm (has 3 true leaves), transplant deeply into humus-rich and fresh soil. Water frequently but sparingly. Depending on your habits, eggplants can be pruned. Disbud the base of the stems up to the level of the first flower or the first branch. Under cover, starting the plant on a single stem increases precocity. Training on two to three stems increases the number of fruits. In the open field, pruning is optional, the plants start on four or five stems. Clean all the shoots starting from the main stem (suckers starting from the foot, suckers, etc.) to a height of 30 cm, and then keep everything else. This way its foliage will be an ideal shelter for the auxiliaries of your organic crops. Stake. A slightly more heat-demanding crop than tomatoes.
