The Greater Burdock is a biennial or perennial plant that should have a place in every garden, provided there is enough space, as its development is spectacular.
Highly prized in Japan, the taproot and flower stalk have a flavor similar to artichoke and are eaten raw or like salsify. The young shoots are cooked in water with vinaigrette, as are the leaf petioles.
A mulch of Greater Burdock is also effective against fungal contamination.
Finally, it attracts pollinators.
Open-pollinated seeds harvested exclusively from the Pot'à'Jo garden, a 1500m² market garden combining horticulture and permaculture. Everything is cultivated there with deep respect for nature and its inhabitants. I have been cultivating my own seeds, from seed to seed, for years. -
